Super speedy, this One Pan Spicy Teriyaki Beef Udon takes only 15 minutes to make. Widely used in Japanese barbecue dishes, teriyaki's name comes from the Japanese 'teri', meaning 'shine' and 'yaki' meaning fried or grilled.

Preparation

Get Started
  • Heat a drizzle of oil in a frying pan on high heat.
  • Once hot, fry the mince and mushrooms, 5-6 mins. Break up the mince as it cooks.
  • Once cooked, drain the fat from the mince. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.

Udon Time
  • Next, add the coleslaw mix. Stir-fry, 1-2 mins.
  • Add the udon to the pan. Toss to coat, using a fork to gently separate them.
  • Stir-fry, 1 min more.

Add Flavour
  • Stir in the teriyaki, sambal, honey and water (see pantry). TIP: Put hardened honey into hot water for 1 min.
  • Toss to coat everything in the sauce.
  • Stir-fry, 1 min more. 
  • Taste and season with salt and pepper if needed.

Dinner's Ready!
  • Share the noodles between your serving bowls. 
  • Sprinkle over the peanuts to finish.
