Preparation

Get Prepped
  • Zest and cut the lime into quarters.
  • Peel and grate the garlic (or use a garlic press).

Fry the Prawns
  • Place a large pan over medium-high heat.
  • Once hot, add the prawns. Season with half the Cajun spice, salt and pepper.
  • Fry for 4-5 mins. IMPORTANT: Wash hands and equipment after handling raw prawns. Prawns are cooked when pink on the outside and opaque in the middle.
  • Once cooked, add the lime zest and garlic to the prawns and fry for 1 min. Remove the pan from the heat.

Dish Up
  • Meanwhile, in a small bowl, combine the remaining Cajun spice, creme fraiche and mayo.
  • Season to taste with lime juice, salt and pepper.
  • Spoon the creamy Cajun sauce into the bottom of your serving bowl.
  • Top with your cooked prawns and sprinkle over the crispy onions to finish.
  • Serve any remaining lime wedges alongside.
