Forget sausage rolls, these lamb cheeseburger bites are going to be the talk of the table. Smokey lamb, tangy onion chutney and cheese are all encased in flaky filo pastry and served bite-sized, for ease. Add the burger sauce for dipping and you’ve got yourself the ultimate finger food!

Preparation

Make the cheeseburger filling
  • Preheat oven to 220°C/200°C fan-forced.
  • Thinly slice onion.
  • Heat a large frying pan over high heat. Cook lamb mince (no need for oil!) and brown onion, breaking up with a spoon, until just browned, 4-5 minutes.
  • Add all-American spice blend and cook until fragrant, 1 minute. Season to taste.

Assemble the filo-wrapped bites
  • On a flat surface, evenly stack 2 sheets of filo pastry with a drizzle of olive oil between each layer.
  • Spoon half the lamb mixture, onion chutney and shredded Cheddar cheese down the long side of the filo sheet then roll the pastry over into a log shape.
  • Evenly stack another 2 sheets of filo pastry and repeat with remaining lamb mixture, onion chutney and cheese to make 2 logs.
  • Cut each log into 10 even pieces (you should have 20 in total).

Bake the filo-wrapped bites
  • Place filo-wrapped bites 3cm apart on a lined oven tray.
  • In a small bowl, whisk the egg.
  • Brush egg wash over the top of the filo-wrapped bites and sprinkle over sesame seeds.
  • Bake until golden and crisp, 12-15 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Finish & serve
  • Place lamb cheeseburger filo-wrapped bites on a serving platter. 
  • Serve with burger sauce. Enjoy!
