Preparation

  • Place 2 TBSP butter (4 TBSP for 4 servings) in a small microwave-safe bowl; bring to room temperature. Wash and dry produce.
  • Roughly chop parsley. Quarter lemon
  • Massage grain blend in package to separate grains; partially open package. Microwave until heated through, 1½-2 minutes. TIP: Microwave times may vary. Be careful when handling and opening the pouch.

  • Transfer grains to a large bowl. Add spinach, peas, almonds, garlic powder, half the parsley, basil paste, a squeeze of lemon juice, 2 TBSP olive oil (4 TBSP for 4 servings), salt, and pepper. Stir until spinach begins to wilt. Set aside.

  • Pat tilapia* dry with paper towels; season all over with Fry Seasoning, salt, and pepper. Sprinkle both sides with flour; press to adhere. 
  • Heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add tilapia and cook until lightly browned, 2-3 minutes. Flip; cook until opaque and cooked through, 2-3 minutes more. Turn off heat; transfer to a plate.

Finish & Serve
  • Microwave butter until softened, 5-10 seconds. Stir in romesco sauce and remaining parsley.
  • Divide grain salad between bowls. Top with tilapia and dollop with romesco butter. Serve with remaining lemon wedges on the side.
