One-Pan Saucy Beef Meatball Subs

with Mozzarella & Salad

5 min
Difficulty: 1/3

What’s not to love about a classic Italian meatball sub? This one’s exceptionally easy to get to the table, and it comes together in one pan (thanks to our fully cooked beef meatballs!). Add lots of marinara sauce and melty mozzarella, and serve these subs alongside a salad of mixed greens, carrots, and Italian dressing to complete the meal.

Cooking Oil

Preparation
1
Prep
• Wash and dry produce. • Halve baguettes lengthwise and toast.
2
Cook Meatballs
• Heat a drizzle of oil in a medium pan over medium-high heat. Add meatballs and cook, stirring occasionally, until warmed through and browned all over, 3-5 minutes. Season with ½ tsp Italian Seasoning (1 tsp for 4 servings), salt, and pepper. (Be sure to measure the Italian Seasoning; we sent more!) • Stir in marinara and a splash of water. Bring to a simmer and cook until sauce is warmed through, 30-60 seconds.
3
Make Salad
• While meatballs cook, in a large bowl, toss together mixed greens, dressing, and half the carrots (all for 4 servings). Taste and season with salt and pepper if desired.
4
Finish & Serve
• Top bottom baguette halves with meatballs and sauce. Sprinkle meatballs with mozzarella. Close subs. Divide subs and salad between plates. Top salad with croutons and serve. . ***Meatball is fully cooked when internal temperature reaches 165º.***
