Bring some sparkle to your silly season platter! We’ve taken the beloved cheeseburger and nestled it inside layers of flakey, golden filo pastry. Served warm, these elegant, crispy bites are the perfect Christmas finger food packed with savoury flavour and easy to enjoy while you're caroling or unwrapping gifts.

Preparation

Make the cheeseburger filling
  • Preheat oven to 220°C/200°C fan-forced.
  • Thinly slice brown onion.
  • Heat a large frying pan over high heat. Cook beef mince (no need for oil!) and brown onion, breaking up with a spoon, until just browned, 4-5 minutes.
  • Add All-American spice blend and cook until fragrant, 1 minute. Season to taste.

Assemble the filo-wrapped bites
  • On a flat surface, evenly stack 3 sheets of filo pastry with a drizzle of olive oil between each layer.
  • Spoon half the beef mixture, gherkin relish and Cheddar cheese down the long side of the filo sheet then roll the pastry over into a log shape.
  • Evenly stack another 3 sheets of filo pastry and repeat with remaining beef mixture, gherkin relish and cheese to make 2 logs.
  • Cut each log into 10 even pieces (you should have 20 in total).

Bake the filo-wrapped bites
  • Place filo-wrapped bites 3cm apart on a lined oven tray.
  • In a small bowl, whisk the egg.
  • Brush egg wash over the top of the filo-wrapped bites and sprinkle with sesame seeds.
  • Bake until golden and crisp, 12-15 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Finish & serve
  • Place beef cheeseburger filo-wrapped bites on a serving platter. 
  • Serve with burger sauce. Enjoy!
