Bring some sparkle to your silly season platter! We’ve taken the beloved prawn classic and heated things up by adding a garlic-chilli butter. Served with a good squeeze of lemon juice, these tasty bites are the perfect Christmas finger food packed with zingy flavour and easy to enjoy while you're caroling or unwrapping gifts.

1 drizzle

• Slice lemon into wedges. Roughly chop thyme.
• Finely chop garlic. Thinly slice long chilli (if using).
• In a medium bowl, combine peeled prawns, lemon pepper seasoning and a drizzle of olive oil.
• Place the butter, thyme, chilli and garlic in a small microwave-safe bowl and microwave in 10 second bursts or until melted. Set aside.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook prawns in batches, tossing, until pink and starting to curl up, 3-4 minutes.
• In the last minute of cook time, return all prawns to the pan, then add the garlic-chilli butter, tossing until fragrant.
• Remove pan from heat, then add a good squeeze of lemon juice. Season to taste
with salt and pepper.
TIP: Have a BBQ? Preheat BBQ to high heat. Grill the prawns until pink and starting to curl up, 2-4 minutes. Transfer to a serving plate and drizzle over garlic-chilli butter and a good squeeze of lemon juice.
• Transfer chilli-butter prawns to a serving platter.
• Serve with any remaining lemon wedges. Enjoy!
