Preparation

Bake the Baguette
  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Cut the baguette widthways at an angle into 2cm slices.
  • Lay the bread slices onto a baking tray.
  • Drizzle with oil and season with salt and pepper.
  • Toast until golden brown, 8-10 mins.

Top the Crostini
  • Over one-half of the slices, arrange blue cheese and a drizzle of cranberry chutney.
  • Over the remaining slices, tear smoked salmon and drained mozzarella
  • Season lightly with salt and pepper.

Dish Up
  • Serve the crostini on platters.
  • To finish, drizzle the balsamic glaze over the top.
