Baked under a bed of lemon slices for juicy, fragrant perfection, this salmon takes centre stage at your festive table. Just before serving, spoon over the garlic-thyme butter and herby mayo for a vibrant finishing touch.

Preparation

Prep
  • Preheat oven to 220°C/200°C fan-forced.
  • Meanwhile, thinly slice lemon.

Arrange the salmon
  • Season both sides of salmon generously with
    salt and pepper, then place salmon, skin side
    down, on a lined oven tray.
  • Evenly spread lemon slices over salmon, then
    lightly drizzle or spray with olive oil.

Bake the salmon
  • Bake salmon until just cooked through, 25-35 minutes (depending on thickness).
  • Remove from oven and allow to rest for 5-10 minutes.

Prep the aromatics
  • While salmon is roasting, finely chop garlic.
  • Pick thyme leaves.

Make the thyme butter
  • While salmon is resting, heat a small frying pan over medium heat with a drizzle of olive oil.
  • Cook garlic, thyme and the butter until fragrant and beginning to brown, 2-3 minutes. Season to taste.

Finish & serve
  • Just before serving, spoon garlic-thyme butter over baked salmon.
  • Serve with dill & parsley mayonnaise. Enjoy!
